Taco Salad with Chicken is so easy to make and delicious! Corn was used in this recipe for a special touch. Although it wasn't the main ingredient for this taco salad with chicken, it was the star. By grilling it on the cob and slightly charring it, the flavor popped and was everything you hoped for. This is a hearty salad and is terrific for a simple weeknight meal.

Summer conjures up memories of cookouts and gatherings with family and friends. The last "official" weekend of the summer is no different. If you are entertaining this weekend, you might want to try a new burger to place on your grill. These Spinach and Feta Turkey Burgers are moist and full of flavor and a yummy alternative to the regular beef burger. A simple Tzatziki Sauce will send these over the top.
A great accompaniment to this burger is a simple skillet potato and vegetable dish. Dice potatoes in 1/2" pieces and brown in a cast iron skillet for 10 minutes. Add diced red pepper, cooked corn (either off the cob or frozen), and red onion. Cook for an additional 5-8 minutes until potatoes are tender. Top with cooked, crumbled bacon.
As evenings begin to cool down, I tend to search for dinner ideas that don't involve the grill but aren't the heavy casserole-type of comfort food that I seek out in winter. This dish was the perfect compromise. Make it vegetarian by adding a package of Chipotle Black Bean Crumbles instead of the ground beef. Served with a side salad this makes a simple weeknight meal.
Light and fluffy and the closest thing I've found to my grandmother's biscuits. Delicious for jams, butter, honey, corn syrup, or just great bread for any meal. My grandmother used to make them pretty much every day.
