Grilled Corn & Red Pepper Kabobs – Delicious!

Now, this is what we call scrumptious...grilled corn and red pepper kabobs!

This is the ideal side dish for your BBQ this weekend...and, oh, so easy!

Adding red peppers to the skewer adds extra color and flavor to the dish.

Grilled Corn and Red Pepper Kabobs


1Clean corn and break into 2 pieces. Clean and quarter the peppers.

2In a small bowl whisk together vinegar, oil, oregano, salt, and pepper. Toss the peppers in the mixture to coat. If you prefer, coat the corn on the cob with the mixture as well or just leave it to the grill to produce a delicious flavor!

3Use wooden skewers that have been soaked in water for about 30 minutes. Onto the skewers, thread 1 piece of corn, 1 piece of pepper, alternating to fill the skewer.

4Place kabobs on the grill, and cook until heated through, turning occasionally to create grill marks on all sides, about 10 minutes. Serve immediately.


6 Corn on cob - shucked

4 Red peppers

2 tbsp Red wine vinegar

1 tbsp Olive oil

2 tbsp Snipped fresh oregano (or 3/4 teaspoon dried oregano, crushed)

1/4 tsp Salt

1/8 tsp Ground black pepper
